Over the weekend Edmund the Yeti and Leo the Fox decided to make tomato relish. This was inspired by eating what can only be described as extremely boring sandwiches, which they both agreed would've been much improved with tomato relish! Firstly Leo scored and cored the two kilos of tomatoes ready for the boiling water that Edmund was preparing to make the tomato peeling easier. Then they speed peeled the tomatos, competing over who could peel the most. Leo won by one tomato but Edmund insisted his tomatos were bigger so they took longer and were harder to peel so it was actually a tie. After some discussion Leo agreed they could call it a tie. They decided not to race when it came to chopping the tomatos because the knives were very sharp, and it was funner to take it easy and chat about all the meals that would be vastly improved with their tomato relish. When it came time to chop the one and a half kilos of onions, Edmund suggested they wear goggles. This turned out to be the best idea either of them had had all day (aside from the idea to making tomato relish), there was't a teary eye to be found in that oniony kitchen! Then Leo salted the tomatos and Edmund chopped the chillies, being extra careful not to rub his eyes with his chilli covered fingers (he accidentally did this once and vowed never ever ever to do it again!). They mixed together the curry powder and mustard seed paste. Then it was time for the cooking to begin. Edmund stirred together the ingredients in a very large pot, while Leo sterilised the jars. After a long couple of hours cooking the mixture, it was finally ready! They were both so excited they could barely keep their hand steady to spoon the incredibly tasty relish into the jars. They took turns filling the jars and wiping the spillage off the outside. Then they were finished! Looking at all the jars, they were pretty sure this batch would last them until July, or if they used it somewhat sparingly, maybe August.
